Jerusalem artichoke comes from North America. It came to Europe at the beginning of the 17th century and became one of the basic sources of carbohydrates. In the 18th century, it was replaced by potatoes, and is currently experiencing a renaissance. Jerusalem artichoke flour is a rich source of fiber and iron (20% of the daily requirement), potassium (110.5% of the daily requirement) and vitamin B1 (15.45% of the daily requirement). Due to the high content of polysaccharide – inulin, Jerusalem artichoke can be helpful mainly for diabetics. Inulin is also a natural prebiotic that supports the bacterial flora and improves intestinal peristalsis
Jerusalem artichoke flour can be used for many purposes, e.g.: Jerusalem artichoke pancakes (like potato pancakes), Jerusalem artichoke flour cutlets, an addition to sauces, an addition to soups and in other forms according to your preferences.
